All of Maccabee’s honey is RAW—which means it’s never pasteurised, blended, or processed. We keep it just as the bees made it, preserving the natural flavour, enzymes, and healing properties that make raw honey so special.
What Does “Pollen Type” Mean?
When the MGO (Methylglyoxal) level in our honey is below 100+, we use pollen analysis to identify the floral sources—this is what we call pollen type. It’s essentially a natural “fingerprint” of the honey, showing which flowers the bees foraged from during the harvest.
In the case of our 67% Manuka Kanuka Pollen Type honey, lab testing confirms that 67% of the pollen comes from Manuka and Kanuka blossoms. The remaining 33% reflects other native plants that were flowering at the same time—adding unique character and flavour to each batch.
