At Maccabee’s Far North Honey, every jar is filled with 100% raw, natural New Zealand honey. We never pasteurise, never add sugar syrup, and we never use chemical sprays around our hives.

Our bees forage freely in the pristine landscapes of Northland, and we work in harmony with their natural rhythms. The result? Honey that’s as clean, honest, and flavourful as the land it comes from.

Why We Don’t Pasteurise Our Honey

At Maccabee’s Far North Honey, we believe in keeping honey as close to its natural state as possible. That’s why none of our honey is pasteurised.
Pasteurisation involves heating honey to high temperatures—often 70°C or more—to destroy naturally occurring yeasts. The honey is then rapidly cooled and filtered before bottling. While this process may make honey look smoother and easier to handle on a commercial scale, it comes at a cost.

What’s Lost in Pasteurisation?
Overheating and heavy filtering can strip honey of some of its most valuable natural components, including:
• Beneficial enzymes that aid digestion and support immune health
• Natural antioxidants that help fight free radicals
• Bee pollen, a nutrient-dense superfood rich in vitamins, minerals, and amino acids

These naturally occurring elements are what make raw honey such a prized, health-supportive food. Pasteurised honey may look more uniform—but it’s lost much of its goodness.

Natural Honey

Natural nutrients such as vitamins, antioxidants, and minerals are also damaged by the high heat of the pasteurisation process.

It is important to note that honey does not need to be pasteurised to make it safe to eat. In order to be classified as raw, honey should not be over heated during the production or storage processes and should not be pasteurised. Raw New Zealand Honey has more flavour, maintains its natural integrity, and will naturally granulate.  Honey straight from the hive is packed full of unique flavours. At Maccabees Honey we keep our batches small minimally filtered and not over heated. This is what our customers request, which is why you may find the odd bit of pollen / wax, colour variation and granulation.

Our honey is fresh from the hive and is supplied direct to you at wholesale rates in either 7 or 15kg tubs when in stock.

MGO stands for Methylglyoxal which is the organic compound responsible for Manuka honey’s strong antibacterial properties.
